If you have had rib-eye steak or beef tenderloin, you must have noticed how expensive they are. Honestly, these are one of the most affordable and most enormous meat cuts to every try. These meat cuts are pretty expensive, which is why not a lot of people prefer having that. But, you should also know that it is the price that makes the meat cuts so desirable. 

The price of filet mignon fluctuates on a significant basis. But, the scarcity of meat also depends on the price and quality. So, no matter what you choose, you need to ensure that you proceed with it properly. The tender cuts are usually small and one of the most expensive ones. 

Expensive steaks are tender

When it comes to choosing the expensive steak cuts, they are usually the rib-eye, tenderloin, strip loin, and T-bone. Apart from that, the porterhouse steaks are extremely expensive. Since they are obtained from the higher parts of the animals where the muscles do not get much exercise, the meat usually around that region is tender. 

You will also need to consider the carcass beef meat. Therefore, it might be a little less profitable, but butchers move about it accordingly.

Tough cuts are cheap

While the tender cuts happen to be expensive and effective, it is necessary to understand that the tougher cuts are usually cheap. The tougher cuts are usually obtained from areas such as bottom sirloin, chuck, round, and bottom. Although they are effective, not a lot of people prefer having it. Too much exercise often makes these areas tough and hard to chew. The tougher areas need to be boiled and cooked at low temperature for a long time to ensure better results. 

The butcher doesn’t make much profit on the beef carcass, mostly the area from where rib and the short loin is received. Beef chuck is surely one of the best examples. Beef chuck is obtained from the steer shoulder and is made of complex, tough muscles and connective tissue. 

In the case of a new steak, beef chuck is pretty expensive. Nowadays, the beef chuck is isolated from certain muscles and sold individually to ensure the steak can be easily roasted. The newer steaks for beef chuck brings about more profit, and some of the prominent examples of these include Denver steak, ranch steak, and flat iron steak.
